| 2 | | WHEREAS, The members of the Illinois House of | 3 | | Representatives wish to congratulate Harold's Chicken, a | 4 | | successful Black-owned business, on the occasion of their 70th | 5 | | anniversary; and
| 6 | | WHEREAS, Harold's Chicken is one of Chicago's oldest | 7 | | Black-owned restaurants; and
| 8 | | WHEREAS, Harold's Chicken was founded by entrepreneur | 9 | | Harold Pierce when he opened a small restaurant with his wife, | 10 | | Hilda, on 39th Street called H&H in 1950; and
| 11 | | WHEREAS, Harold's Chicken became one of the few examples | 12 | | of a thriving fast food chain that was owned by, and primarily | 13 | | served, the Black community; and
| 14 | | WHEREAS, Harold's Chicken is known for serving freshly | 15 | | fried chicken, a chain-wide policy initiated by Harold Pierce, | 16 | | and cooking their fried chicken in a mix of half beef tallow | 17 | | and half vegetable oil, which produces a taste similar to the | 18 | | traditional home-cooked fried chicken that was invented in the | 19 | | American South; and
| 20 | | WHEREAS, Harold's Chicken has expanded to 45 locations |

| 1 | | today, with 26 locations in Illinois alone; they have | 2 | | additional locations in Arizona, California, Georgia, Indiana, | 3 | | and Nevada, with plans to further expand to Charlotte, North | 4 | | Carolina, St. Louis, Missouri, Houston, Texas, and Las Vegas, | 5 | | Nevada; and
| 6 | | WHEREAS, Harold's Chicken is now overseen by CEO Kristen | 7 | | Pierce, Harold Pierce's daughter; therefore, be it
| 8 | | RESOLVED, BY THE HOUSE OF REPRESENTATIVES OF THE ONE | 9 | | HUNDRED SECOND GENERAL ASSEMBLY OF THE STATE OF ILLINOIS, that | 10 | | we congratulate Harold's Chicken on their 70th anniversary and | 11 | | wish them continued success; and be it further
| 12 | | RESOLVED, That a suitable copy of this resolution be | 13 | | presented to Harold's Chicken CEO Kristen Pierce as an | 14 | | expression of our esteem and respect.
