HOUSE RESOLUTION

 
2     WHEREAS, The members of the Illinois House of
3 Representatives are pleased to congratulate Chef Paul Virant,
4 owner of Vie in Western Springs, on his recent appearance as a
5 competitor on Iron Chef America; and
 
6     WHEREAS, Chef Virant was introduced by the Chairman, who
7 mentioned that Chef Virant was from Missouri, where his
8 grandmothers took him to the local smokehouse and farmers
9 market; he was also taught how to preserve fruit and pickle
10 vegetables; he went to the Culinary Institute of America and
11 worked in New York City before opening Vie in Western Springs;
12 and
 
13     WHEREAS, The Iron Chefs were introduced and Masaharu
14 Morimoto was selected to compete against Chef Virant; pheasant
15 was presented as the secret ingredient and the battle began;
16 and
 
17     WHEREAS, Iron Chef Morimoto presented his dishes to the
18 judges first; he won praise from the judges for his pheasant
19 rice with grilled pheasant breast; and
 
20     WHEREAS, Chef Virant presented his dishes to the judges and
21 was praised for crispy gnocchi with braised pheasant; he also

1 won points for his Scotch egg; and
 
2     WHEREAS, The final results showed that Iron Chef Morimoto
3 won by only one point; Chef Virant made a valiant effort and,
4 in the end, showed the world the high quality of food that can
5 come from the Chicago suburbs and their fine restaurants;
6 therefore, be it
 
7     RESOLVED, BY THE HOUSE OF REPRESENTATIVES OF THE
8 NINETY-SIXTH GENERAL ASSEMBLY OF THE STATE OF ILLINOIS, that we
9 congratulate Chef Paul Virant and hope for a rematch someday to
10 prove his worth against the Iron Chefs; and be it further
 
11     RESOLVED, That a suitable copy of this resolution be
12 presented Chef Paul Virant as a symbol of our respect and
13 esteem.
